Ingredients
Pizza chaffles
- 4 4 eggeggs
- 2 cups (8 oz.) 475 ml (230 g) shredded cheddar cheese
- ½ tsp ½ tsp Italian seasoning
- 1 oz. 28 g Parmesan cheese, grated
Topping
- 4 tsp 4 tsp tomato sauce, sugar free
- 16 16 pepperoni slices
- ¾ cup (3 oz.) 180 ml (85 g) shredded mozzarella cheese

Making low carb simple
Instructions
Pre-heat your waffle maker.
Place all of your ingredients into a mixing bowl and beat to combine well.
Lightly grease your waffle iron and then evenly spoon the mixture over the bottom plate, spreading it out slightly to get an even result. Close the waffle iron and cook for approx 6 minutes, depending on your waffle maker.
Gently lift the lid when you think they’re done.
Line a large baking tray with parchment paper and place the chaffles on it.
Spread each chaffle with tomato sauce and top with pepperoni slices and mozzarella.
Place under a hot grill until the cheese is browned and bubbly (approx. 2 minutes).
Tip
These chaffles are best eaten straight away but can be frozen and reheated.
They can also be stored, wrapped well, in the fridge for up to four days for lunch prep.
Feel free to add your favorite pizza toppings like olives, anchovies, diced bell peppers, sliced mushrooms, and other keto-friendly choices.

What great timing! I just decided to take keto friendly mini pizzas to a party next week and was debating which way to approach it for something satisfying for non-low carb eaters. I opened up Diet Doctor, as I do every morning to see what is new today, and here is exactly what I need. Looking forward to seeing how these are received.

I don't have a waffle iron. Could I just make these like little pancakes fried in a pan, flip, fry them a little longer, then add the toppings? Thanks!!!

Just made these for lunch for me and the hubby, very good and easy. I finished them under the broiler in and electric oven. My waffle iron is large, 4 servings is 2 waffles, saving the second pizza for lunch tomorrow. Loaded them with homemade unsweetened marinara, mozzarella, pepperoni, green peppers and onions.

I have made them this way, because I don't have a waffle iron either and I think they turned out great. Make them like you would a pancake.

60ml parmesan cheese is 23g. I have let the recipe team know that this is showing volume instead of weight for the parmesan.

This recipe as written makes 4 servings. The yield/portion depends on the size of your waffle maker. If you get 4 chaffles, then 1 is a serving.

I'm loving this recipe!! Used a george forman grill, tilted it up slightly to stop the mixture dripping out and cooked them two at a time for around 7 mins. Then finished off in under the grill with toppings. Will definitely be making again. Thanks diet doctor, a real hit here :)

Heads up for anyone using the metric system.
It's not 225 g -- it's 140g.
Or just use 2 cups.

These are great!The recipe uses 8 oz cheddar cheese which is 225 grams.

I wasn't a fan of this recipe at all. It made a mess in my waffle iron and the over powering smell of hot cheeses was terrible! I will not be making these again.

This recipe is fantastic, definitely satisfies my craving for cheese :) Just a quick question - I can make 11 Chaffles using this recipe for 4 servings, how many Chaffles would count as 1 serving? Also how many grams of pepperoni should i use because my pepperoni slices are much bigger than the ones in the picture, many thanks.
